Ingredients

Mushrooms à la crème

  • 1 onion — thinly sliced

  • 4 cloves of garlic — finely chopped

  • 100 g bacon — diced

  • ¼ celeriac — diced small

  • 50 g butter

  • 300 g mixed mushrooms

  • 2 tbsp all-purpose flour

  • 4 tbsp LINIE Aquavit Original

  • 300 ml heavy cream

  • 200 ml chicken or vegetable stock

  • 50 grams pickled pearl onions

  • 1 bunch chives — finely chopped

  • Salt and pepper

Tartelets

  • 500 g puff pastry

  • 1 egg — whisked

Garnish

  • 4-8 slices of bacon

  • ½ bunch flat-leaf parsley — picked

Preparation steps

    Mushrooms à la crème:

    1. Sauté onions, garlic, bacon, and celeriac in butter until golden.

    2. Add mushrooms and sauté them as well.

    3. Stir in flour and then add LINIE, cream, and stock, and bring it to a boil until it thickens.

    4. Add pickled pearl onions, chives, and seasoning before serving. Adjust the seasoning to taste.

    Tartlets

    1. Cut out 4 round bases from the puff pastry (you can use a cup or glass) and brush them with egg.

    2. Cut 12 thin strips of puff pastry that fit around the circumference of the base as they will form the edge of the tartelet.

    3. Layer the strips and brush between each layer.

    4. Bake the tartelets at 190°C (375°F) for about 10 minutes until they are puffed up and golden.

    Plating

    1. Serve the mushrooms à la crème in the tartelets and garnish with crispy bacon and parsley before serving.
