The secret to our version is that we've injected LINIE into the roast, which adds even more flavor and makes the roast even juicier. Along with the sweet LINIE-glazed red cabbage and the traditional caramelized potatoes, it's a dish that reminds us of the holidays. Roast pork

  • 1 kg pork roast or pork loin

  • 4 tbsp coarse salt

  • 50 ml LINIE Aquavit Original — for injecting

LINIE-glazed red cabbage

  • ½ red cabbage head – sliced

  • 200 ml vinegar

  • 1 cinnamon stick

  • 3 bay leaves

  • 2 slices of lemon

  • 2 slices of orange

  • 4 cloves

  • 4 whole cardamom pods

  • 250 g sugar

  • 4 tbsp LINIE Aquavit Original

  • Salt and pepper

Caramelized potatoes

  • 700 g small potatoes – boiled and peeled

  • 170 g sugar

  • 200 g butter

  • Salt and pepper

Preparation steps

    Roast pork

    1. The day before: Salt the pork skin and rub it into the meat.

    2. The next day: Inject LINIE into the roast in 5-6 different places and refrigerate it until it's time to roast.

    3. Salt the roast again and roast it in a convection oven at 392°F for 1 hour and 20 minutes.

    4. It is essential to let the roast rest for a minimum of 30 minutes before carving.

    LINIE-glazed red cabbage

    1. Boil the red cabbage in plenty of water for about 10 minutes, then drain.

    2. In another pot, bring the rest of the ingredients to a boil for about 15 minutes.

    3. Add the red cabbage to the same pot and bring it to a boil again before seasoning with salt and pepper.

    Caramelized potatoes

    1. Melt the sugar in a medium-hot pan, add the butter, and let the sugar bubble before adding the potatoes.

    2. Add the potatoes and let it simmer for 30 minutes, then season with salt and pepper.
