Ingredients

Pickled beets

  • 5 beets

  • 2 dl vinegar

  • 170 g cane sugar

  • 3 star anise

  • 1 tsp black peppercorns

  • 1 tsp coriander seeds

  • 5 bay leaves

  • 100 ml LINIE Aquavit Original

  • 1 tbsp salt

Pork belly

  • 12 thick slices of good, smoked pork belly – hand-cut

  • Salt and pepper

Apple compote

  • 3 tart apples – sliced with peel

  • 3 sweet apples – sliced without peel

  • 1 large onion – sliced thinly

  • 1 tbsp sugar

  • 1 tbsp apple cider vinegar

  • 3 tbsp LINIE Aquavit Original

  • Fat from the pork belly

  • 1 tbsp small capers

  • Salt and pepper

Garnish

  • 1 bunch of chives – finely chopped

Preparation steps

    Pickled beets

    1. Boil the beets with skin on for about 1 hour, drain the water and then chill them.

    2. When they are cold, remove the skin and cut the beets into bite-sized pieces.

    Pickling

    1. Bring vinegar to a boil with star anise, black peppercorns, coriander seeds, bay leaves, LINIE Aquavit Original and salt.

    2. Add cane sugar and stir until completely dissolved.

    — At least 2 days later:

    Pork belly

    1. Fry the thick pork belly slices until golden and crispy on a medium heat pan and save the fat for later.

    Apple compote

    1. Sauté the onions in the pork belly fat.

    2. Add apple slices, sugar, apple cider vinegar, LINIE Aquavit Original, small capers, salt and pepper.

    3. Simmer the compote for about 30 minutes, until it is cooked soft and thick.

    Plating

    1. Place the apple compote in a deep dish with the crispy pork belly slices on top.

    2. Serve with pickled beets on the side and garnish with chives.
