Chicken salad

  • 1 high-quality chicken without skin

  • 1 onion — diced

  • 2 carrots — diced

  • 3 bay leaves

LINIE Mayo with Karl Johan mushrooms

  • 200ml LINIE mayo (see recipe here)

  • 100 g Karl Johan mushrooms — cut into bite-sized pieces

  • 1 onion — thinly sliced

  • 2 cloves of garlic — finely grated

  • 1 tbsp butter — for sautéing

  • 1 apple — cut into small cubes

  • 1 lemon — both zest and juice

  • ½ bunch parsley — roughly chopped

  • 50 g parmesan cheese — finely grated

  • Salt and pepper

LINIE pickled tomatoes

  • 10 cherry tomatoes

  • 1 tbsp LINIE Aquavit Original

  • 1 tbsp apple cider vinegar

  • 1 tsp salt

  • 1 tsp sugar

  • 2 sprigs of tarragon — finely chopped

Crispy chicken skin

  • Skin from the chicken

  • Salt and pepper


  • 4 slices of good bread

  • Spread for the bread

Preparation steps

    Chicken salad

    1. Boil the chicken in plenty of water with onions, carrots, and bay leaves.

    2. Cool the chicken and shred it into bite-sized pieces.

    LINIE Mayo with Karl Johan mushrooms

    1. Sauté mushrooms, onions, and garlic in butter until golden, then let it cool.

    2. Mix all the ingredients into the LINIE mayo, including the chicken, before seasoning with salt and pepper.

    LINIE pickled tomatoes

    1. Halve the tomatoes and mix them with LINIE, apple cider vinegar, salt, sugar, and tarragon before serving.

    Crispy chicken skin

    1. Flatten out the chicken skin and place it on a baking sheet lined with parchment paper, then season it well.

    2. Bake at 180°C for about 15 minutes until it's crispy and golden. 

    3. Pat the chicken skin dry with a paper towel and let it cool.


    1. Serve the chicken salad on toasted bread with LINIE pickled tomatoes and crispy chicken skin on top.

    2. You can garnish with LINIE pickled red onions and parsley before serving.
