Ingredients

Curry Herring

  • 1 onion — diced

  • 2 tbsp curry

  • 2 tbsp butter — for frying

  • 4 marinated herring fillets — cut into bite-sized pieces

  • ½ apple — cut into small cubes

  • 100 ml LINIE mayo (see recipe here)

  • 100 ml creme fraiche 38%

  • 1 tbsp LINIE Aquavit Original

LINIE Apples and Fennel

  • 1 red apple — cut into thin strips

  • 1 fennel bulb — cut into thin strips

  • ½ bunch dill — finely chopped

  • 1 sprig tarragon — finely chopped

  • 1 organic lemon — both grated zest and juice

  • 2 tbsp LINIE Aquavit Original

  • 1 tbsp apple cider vinegar

  • 1 tsp salt

  • 1 tsp sugar

Bread

  • 4 slices of good, dark rye bread

  • Spread for the rye bread

Garnish

  • ½ bunch dill — picked

Preparation steps

    1. Sauté the onions in the butter, and add the curry.

    2. Sauté for a few minutes until the onions are soft and the curry is aromatic, then let it cool.

    3. Gently mix the cooled onion and curry mixture with the other ingredients.

    4. Prepare the dish well in advance so that the herring can absorb the flavors.

    1. Slice the apple and fennel into thin strips, and finely chop the dill and tarragon.
