Christmas.

That special LINIE time of year

Enjoy Christmas the Nordic way. Savour the season’s rich dishes with LINIE Christmas Edition and the seafood with LINIE Aquavit. And invite everybody over for some white glögg.


Recipe.

White glögg with LINIE

Ingredients (Recipe for 6 people):

1 l apple juice, 2 dl LINIE Christmas Edition, 20 cardamom pods (green), 30 cloves, 6 sticks of cinnamon, 8 slices of fresh ginger root, peeled almonds, raisins and 1 apple cut into little cubes.

 

Procedure:

Heat up the apple juice and LINIE Christmas Edition in a pot.

Grind the spices in a mortar (except for the cinnamon which you only have to cut or break into pieces) and put the spices in a teabag. Then put the ginger root slices (each 1 cm thick) in another teabag – and place both bags in the pot.

When the glögg boils, turn down the heat and let it stay on the stove for an hour. Warm up before serving in glasses – with raisins, almonds and apple.

 


Recipe.

Marinated salmon with LINIE

Ingredients (Recipe for 8-10 people):

Place 1 kg salmon fillet on a tray with the skin-side down. Grind 3 tsp. caraway and 2 tsp. anise in a mortar, and mix it with 2 tbsp. salt, 2 tbsp. sugar and 1 tsp. pepper.

 

Procedure

Rub the grinded spices into the fish. Pour 8 cl LINIE Aquavit over the salmon and cover it with cling wrap. Place another tray on top of the salmon to put a light pressure on it – and keep it in the fridge for three to four days.

Each day pour the brine over the fish with a spoon, cover it up and keep it under pressure again in the fridge.


Recipe.

Pork roast with laurel leaves and cloves

Ingredients (For 6 people):

1 kg pork loin with rind and bone, coarse salt, 1 onion, 4 laurel leaves and 6 cloves.

 

Procedure:

Scratch the rind without cutting into the meat. Sprinkle the roast with coarse salt and rub it between the rinds. Give the salt half an hour to work – and set the oven at 160oC. Place the roast in a baking tray with the rind downwards. Add water so the rind is just covered.

Place the roast in the oven for 30 minutes, take it out, pat the rind dry and sprinkle it with a little more salt. Stick laurel leaves and cloves into the rind and place the roast with the rind upwards on an ovengrid. Make sure the rind is as horizontal as possible (and even out with curled up foil).

Pour some water into the baking tray and add the roughly cut onion in the water. Place the ovengrid with the roast above the baking tray and let it roast for an hour at 180oC or until the cooking thermometer reaches 65oC.
