Drink

Oslo Coffee

The origins of this hot drink might be unknown, but its potency to prolong chill spring nights and heat up winter afternoons speaks for itself.

 

 1⁄2 ts Brown sugar
 2 cl LINIE Aquavit
 2 cl Cointreau or Grand Marnier
 Black coffee
 Whipped cream
 Dark chocolate

 

Stir the sugar in a glass with a bit of warm coffee.
Pour LINIE Aquavit, the citrus liquor, fill up with coffee and stir.
Gently pour whipped cream over the back of a spoon to make a layer on top of the drink.
Garnish with finely grated dark chocolate.

Don’t stir the drink, but enjoy it through the layer of whipped cream.

Food

Aquavit-Cured Deer

 

400g deer sirloin

3 tbsp salt

3 tbsp sugar

1 tsp thyme, dried

Grounded black pepper

2 cl LINIE Aquavit

Trim the deer filet. Mix salt, sugar, thyme and pepper. Rub the filet in the mix and put it in a plastic bag. Pour the aquavit in the bag and close it. Let it rest in the fridge for a day. Wipe the filet and cut it in thin slices.

 

Stirred lingonberries

1 dl lingonberries

25 g sugar

4 gelatin plates

Stir the lingonberries until the sugar has dissolved. Take half of the berries and add 0,5 dl water. Heat it up. Add and stir in the 4 plates of dissolved gelatine. Put the mix in a cool spot until it hardens. Stir with a handmixer until you’ve got a lingonberry purée.

 

Cauliflower purée

100 g of cauliflower

1/2 onion

1 clove of garlic

0,5 dl cream

0,5 dl chicken broth

Finely chop onions and garlic. Roast in a little boiler untill golden. Add cauliflower in bouquets, chicken broth and cream. Let it stew for about 20 minutes. Mix it gently with a handblender.

Put the cauliflower purée at the bottom and place slices of cured deer and small portions of stirred lingonberries and lingonberry purée on the plate.

  

Rye bread crisps

Rye bread

Salt

Olive oil

Set your oven to 120° C. Cut rye bread into thin slices and add sprinkles of salt and olive oil. Bake the slices about 45 minuttes. Serve the rye bread crisps on the side or as chips sprinkled on top.

4,5cl Linie Aquavit Double Cask

1,5cl Nikka from the Barrel

1cl Homemade Yuzu Sirup

2 Dashes Dr. Adam's Tea Pot Bitters

 

Stir all ingredients over ice in a mixing glass.

Strain on a huge cube into a Japanese tea mug.

Finish with the oil of a Grapefruit zest.

Place the drink on a serving plate and garnish with another zest of grapfruit and a slice of Norwegian cured salmon topped with grapefruit zest and dill.
